Bring On the Green

      

Happy St. Patrick’s Day!!!!

I bought this smoothie book awhile back and looked to it this morning for some inspiration.  I wanted to make an awesome green smoothie today in honor of Good Ole St. Patty! I found a pretty awesome recipe that I adapted to make today’s creation.      

     

This book is so awesome because it is filled full of ideas for different smoothies and juices. They didn’t get the memo about spinach being awesome in smoothies, so any recipe that I find in here I ponder how spinach could be added.      

Besides being a holiday today, I have the beginning signs of a cold so I used my smoothie to amp up the green goodness. Because we all know that greens are good for the bod!     

     

I am dubbing this my Good Luck Monster, since I really really don’t want to get sick. Here’s hoping!     

Now, I just have to preface this smoothie by noting that Aneta had featured a Green Monster Smoothie awhile back where she had used cucumber instead, as she had run out of spinach that particular day. This got to me to thinking about how refreshing that would be . So I was able to find a recipe in the smoothie book that included cucumbers, but knew I wanted more green.     

       

Today’s  STAR Ingredients are:      

Spinach     

Cucumber     

Fresh Mint Leaves     

Good Luck Smoothie:      

  • 1 cup of plain non-fat yogurt
  • 1 banana
  • 1 huge handful of spinach
  • 1/2 cup chopped cucumber
  • several sprigs of fresh mint leaves
  • 1 scoop of vanilla protein powder
  • splash of almond milk

     

This was definitely a REFRESHING smoothie. I liked the minty aftertaste, but it was not overpowering by any means. I see a Chocolate Mint Smoothie in my near future! 😉      

       

Running News:      

I was filled with butterflies when I opened my inbox to find a lovely email from my friends over at Team In Training.      

     

This email was officially inviting me to my first information session about the Nike Marathon, the marathon that I am going to run in 214 days. Omigawsh, I am not kidding you when I say I jumped out of chair and started doing the happy pants dance.      

The meeting will take place in mid- april where I will learn all about the Team In Training process and how I get to raise money to help The Leukemia & Lymphoma Society.  I am just so excited that it’s almost time to officially start training for this event.  Destination 26.2 HERE I COME! Woop Woop!     

 
 
 

Any one have any fun plans for St. Patty’s Day?  
 
I am making J. Alabama (the boyfriend) a delicious dinner inspired by Gina at Looking Forward. That’s right, I am tackling the orange glaze chicken, with a lemon risotto and a strawberry poppy seed salad. Oh and I am going to make mini pistachio pudding pies for dessert.  I was going to go with a whole green and/or irishy theme, but I just don’t do corned beef very well. For fun, the meal will be accompanied by a nice Guinness. I may have a sip, but those things are just too filling for me.

  1. Ohhh I hope your good luck green monster works! I had a gigundo one on Sunday in hopes of staving off my illness… I think it helped a little! Your dinner tonight sounds amazeee, I want to come! How exciting to get your first team in training email 🙂 I am not doing anything Irish like tonight (despite my very Irish last name!).. I have to meet with the DJ and get some stuff for the honeymoon maybe. Enjoy your lovely dinner!

    so much!!! mint, eh? i like it! last summer, i planted some mint in my backyard. maybe ill go look for some and try it out in my juice tomorrow.
    How do u make your Green Monsters? You said you dont have a juicer. What do u use?

    as i am typing, i am eating a very green inspired lunch. heheh i love all the green.

    214 days till the marathon. yikes!! im a little scared. i feel like its coming so quickly. eeeeeee.

    SOOO exciting that your TnT meeting is coming up and then I’m sure you will get the ball rolling. I have heard such amazing things about NWM!

  5. Your smoothie looked delicious. Congrats on taking on the challenge of 26.2 for TNT. I have been training with TNT for the past 2 years, and have found it to be the most rewarding experience. I am training for my first marathon with them in the Seattle Rock ‘n’ Roll Marathon. Good luck!!!

  6. You are going to LOVE running the Nike Women’s Marathon!! It is such a scenic run you ALMOST forget the daunting hill that you have to run up! You will also love, love, love your Tiffany necklace you get at the end!!! Good luck, Linz! I can’t wait to hear all about it!
